Boscos' "Cellarman" (both a politically incorrect and genderless term) consists of a group of lucky customers who have been chosen to "tap the cask" during Boscos' daily presentation of "Cask Conditioned Ale". Every weekday (around 5:30 pm), a customer is chosen to perform menial labor normally undertaken by Boscos' brewers. To reward them for their efforts, the customer becomes an official Boscos "Cellarman"; is honored with entry into Boscos Cellarman Hall of Fame; receives a free "Cellarman Glass;" and enjoys the first beer out of the cask they have tapped.

The daily winners then become eligible to become Boscos "Cellarman of the Year". The "Cellarman of the Year" is chosen during the "Cellarman Reunion Party" and is rewarded the opportunity to represent Boscos at the Great American Beer Festival in Denver, CO which includes round trip airfare for two, double occupancy hotel accommodations, and two passes to the Great American Beer Festival.


Cask Conditioned Ales are beers produced in the classic British method. After primary fermentation, the beer has both a secondary fermentation and a conditioning period in the vessel from which it is served. This allows the beer to develop natural carbonation. The beer is unfiltered and contains live yeast, hence the name "Real Ale". Cask beers are usually also "dry-hopped,” which means whole hop flowers are added to the serving vessel. The beer is then dispensed from a "beer engine;" a traditional means of serving that does not use gas pressure, as does modern draft keg. The end result is a beer that is naturally carbonated, unfiltered, and very aromatic.
